    A surprising amount of dishes are inspired by whiny customers. The potato chip (“crisp” to Brits) came about because of a chef in Saratoga had a customer whining that his fries (“chips” to Brits… and Americans at the time) just weren’t thin enough. Sent back multiple orders just to be a pain. So the cook slices the potato paper thin, fries that up, sends it out, and gets a rave review. Soon, “Saratoga Chips” was the restaurant’s most popular food. AND THAT’S WHY WE CALL THE CRISPY POTATOES CHIPS OVER HERE.
