    those grills have a vent on the bottom that adjusts to limit airflow. That’s how you control combustion temperature. Though that’s probably a gas grill and what your seeing is the lava rocks/fire bricks or whatever that particular grill used to stabilize and evenly distribute the heat..

    and damnit. Now i’m hungry. Luckily it’s lunchtime.
