This is an actual delicacy in a few South American countries, namely Peru, Ecuador and Bolivia. My husband lived there, mainly Peru, for a little over 20 years and still to this day can’t pass a pet shop without salivating.
Most likely the veggies are a light colored sweet potato served with the dish.
