The sauce has to be hot enough to melt the cheese at least somewhat, otherwise it&#039;s just not as good.

Varieties include the popular Italian poutine, which uses a spaghetti or michigan type sauce in stead of the standard spicy brown sauce, smoked meat poutine, with added bits of smoked meat, a uniquely Montreal flavor, can&#039;t be successfully duplicated elsewhere.  Also there are places to get the bacon, hot-dog and even chicken poutine.

My favorite Poutine?  Chicken Pouting from La Famille Benny in South Shore Montreal.</description>

The poutine pictured here was made with gravy that is not hot enough to melt the curds.  That is one thing I always look for in a good poutine.
