Pretty sure after the 6th egg and fk ton of add-ins, this became more of a quiche. Then again, I refuse to call Chicago meatpie a ‘pizza’ either.

I had my first omelet about 4 years ago and now I love them. It’s generally dinner once a week. My favorite is fresh eggs (we get them from a farm), spicy sausage, cheddar cheese, and that’s it. Simple but yummy; also hubby almost never breaks them.

No crust so not a quiche (that seems to be the requirement out here.) but ya, peas??? No thanks. Bell peppers or better yet, green chile.

Oh, I do miss a proper chicago meat pie, but did prefer the classic pepperoni,sausage, onions and bellpeppers. New York pizza was very close second greatest pizza in the world, but I hated that city, which may have affected its standings in my book.
