Not to distract from the om nom noming, but this is a cosplay of what, exactly? Or she is cosplaying what? I have absolutely no idea how to use cosplay as an adjective, verb or noun.

She is doing a cosplay of Yoko Ritona from the anime Tengen Toppa Gurren Lagann.

A very good anime, but after about halfway through the series goes downhill.

Nom? Haha, fuck no. Cosplay bullshit can GTFO.

Also, why the hell does this woman look like Hoshi from ST:Enterprise?

This looks nothing like Yoko for one reason: her boobs were enormous in the anime, which was practically her sole defining trait other than being useless.

While it looks cool, I seriously doubt if that weapon is functionally, considering it does not have a gas piston (usually M16/m4/AR-15 all operate with gas piston design)
